Our Washed Specialty Coffee is sun dried in clay brick patios for at least 8 days to slowly remove the moisture until obtaining a 12% humidity level. For this process, the coffee is turned daily by hand to ensure that all beans have that 12% humidity level. That 12% is necessary to preserve the quality of the grain.
